Experimenting with Banana Bread

We’ve used the same banana bread recipe for years and we love it! But recently we started experimenting with it and trying new things. We love to try new recipes, and this coconut and chia seed banana bread is one that we really liked.

My mom’s original recipe called for adding the mashed bananas last, but I always had trouble getting them to incorporate fully and would often end up with a more marbly looking loaf than I wanted. So, in this one I mix the bananas after I cream the butter and sugar which I find way easier.
I really struggle with mashing bananas. I see so many videos of people mashing them with a fork and getting this perfectly creamy mash. But mine always ends up very lumpy which leads to pockets of mushy cooked banana in the end loaf which I do not like. So, I just smash the bananas in with my hands. It is so much easier! And I’m all about finding the easiest way to do something! 🙂
It can be intimidating to try something new. The fear of messing it up can keep us from ever trying anything. What if it tastes bad? What if I don’t have the right mix of ingredients? There are so many ways to mess up in the kitchen. But we can’t let that stop us. Even a tried-and-true recipe that has been in the family for years can always been improved upon. Like changing the order in which you mix the ingredients can make a huge difference.
So, don’t be afraid. Get in there and try something new.

Here at our house, we believe in equipping and training our children in every area of life. Learning how to cook is so important to a healthy lifestyle. We love getting them involved and teaching them from a young age that food is for fuel but also to be enjoyed in moderation. That’s why we don’t mind enjoying treats like coconut and chia seed banana bread. 🙂

Kids are naturally curious and love to learn from a young age. We like to encourage that every chance we get. Now cooking can be dangerous for our little ones but if they are taught about how to handle the tools in the kitchen with respect and care they will quickly catch on and develop and lasting love for cooking. Which really want them to have.

Coconut and Chia Seed Banana Bread

Our classic banana bread with add coconut and chia seeds
Ingredients
- 1 stick of butter
- 1 cup sugar
- 3 over ripe bananas
- 2 eggs
- 1 Tablespoon cinnamon
- 1 cup coconut flakes
- 1/4 cup chia seeds
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 Tablespoon water
- 2 cups flour
Instructions
- Cream Butter, and sugar. Add bananas and mash together with hands.
- Add eggs and beat until well blended
- Add remaining ingredients except the flour and mix well. Then mix in the flour.
- Pour in a well-greased loaf pan.
- Bake at 350-degree for about an hour or until and toothpick inserted in the middle comes out clean.
